Eddy began his higher education at Amarillo College in 1955 shortly after graduation from Crowell High School. In 1957, Eddy earned a Liberal Arts Associate Degree, was ordained as a Minister of the Gospel, and married his wife Verlen. With his previous schooling from Amarillo, Eddy transferred to Abilene Christian University where he completed a Bachelor of Arts, Bible, and Speech. After graduation, He and Verlen moved to Houston, Texas where they pastored Main Street Church of Christ. Eddy served Main Street from 1959 to 1987 filling many roles within the church while also raising a family of 6 children. In 1988, God placed it on their hearts to leave Houston and pastor Farmer's Branch Church of Christ. Here Eddy was the senior pastor for 13 years until in 2001 he brought in Chris Seidman to lead. Eddy transitioned into Community Minister and has done the same since. Upon moving to Farmer's Branch, he involved himself in many local organizations including Farmer's Branch Chamber of Commerce, Farmer's Branch Rotary Club, becoming a charter member of Carrolton - Farmer's Branch ISD Education Board, and founding his own Ambassador's Club which he continues to be a part of today. He and Verlen's children are all married and have blessed them with 25 grandchildren.
